Fall/Winter Paleo Style

I'm alive.
Sorry about the lack of posting. My life has been a bit crazy lately. Lots of photoshoots. Hey I'm not complaining! Its been great! But blogging just hasn't been number one on my list. But I wanted to share some awesome recipes I have either invented or come across. Fall and Winter are such a classic time for seasonal favorites, pumpkin, apple, egg nog, how do I enjoy these things and stay paleo you ask? Why like this:


Paleo Pumpkin Bread
Ingredients:

1 cup almond butter
1 egg
1/3 cup honey
3/4 cup pumpkin
1 tsp baking soda
1/2 cup of almond flour
1/2 tsp nutmeg
1/2 tsp cinnamon
1 tablespoon ground flaxseed
dark chocolate chips or dairy free chocolate chips
Directions:

Turn oven on to 350 degrees
Mix all ingredients well in a bowl
Pour batter into an 8×8 greased pan
Bake for 25-30 minutes

Delish!

Beef Stew
Ingredients
2 pounds stew beef
2 stalks Celery chopped
2 broccoli crowns chopped
Brussel Sprouts chopped
2 tablespoons vegetable oil
2 cups water
1 tablespoon Worcestershire sauce
1 clove garlic, peeled
1 or 2 bay leaves
1 medium onion, sliced
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon paprika
Dash ground allspice or ground cloves
3 large carrots, sliced
1 Box of Trader Joe's Beef Broth

Directions
Brown meat in hot oil. Add water, Beef Broth Worcestershire sauce, garlic, bay leaves, onion, salt, sugar, pepper, paprika, and allspice. Cover and simmer 1 1/2 hours. Remove bay leaves and garlic clove. Add carrots and celery. Cover and cook 30 to 40 minutes longer.




Paleo Apple Crisp
2 cups blanched almond flour
½ teaspoon celtic sea salt
1 teaspoon cinnamon (I used 2 tsp in the crisp, plus I sprinkled the apples with cinnamon before baking)
½ teaspoon nutmeg (I used 1 tsp)
½ cup Coconut oil
¼ honey
1 tablespoon vanilla extract
5 medium apples, peeled, sliced, then chopped in half width-wise
In a large bowl, combine almond flour, salt, cinnamon and nutmeg
In a smaller bowl, combine oil, agave and vanilla. First combine oil and vanilla (works best if coconut oil is heated just enough so it is liquid), then stir in chopped dates.
Stir wet ingredients into dry. Use a fork to mash it all together- you want a crumbly consistency.
Place apples in a 2-3 quart glass baking dish (a pyrex bowl or an 8×8 square) Sprinkle with extra cinnamon if you like!
Sprinkle topping over the apples
Cover and bake at 350° for 50 minutes on low rack
When apples are soft and their juices bubble, remove cover and bake 10 more minutes to brown crisp
Serve warm


Paleo Tacos
Simply fix turkey with Trader Joe's Taco Seasoning
chop up avocado, tomatoes, and salsa as topping and put in a cabbage or lettuce leaf!


Egg Nog!

Ok so this is a favorite of mine and I was totally worried I would miss out on it this year!
This version is delish and no dairy involved! Or HFCS!

4 beaten egg yolks
2 cups coconut milk,
1cup almond milk,
1 teaspoon Honey
1 teaspoon vanilla extract
1 teaspoon rum extract
ground nutmeg and cinnamon to taste and a pinch of cloves
Directions:

Mix egg yolks, 2 cups of coconut/almond milk and honey Stir gently but constantly over medium-low heat until the mixture thickens enough to cling to and coat the back of a spoon, about five to ten minutes. Be patient with this process – if you turn the heat up too high or don’t stir, the egg yolks might turn into scramble eggs.
Remove from heat and set the pot in a larger bowl filled with ice water (careful, so no water overflows into the eggnog!) and stir for 2-3 minutes then add the last cup of milk, vanilla, spices and rum extract.

Chill in the fridge! The add extra nutmeg, and serve! Try this in your coffee too its delightful!

It's My Favorite

Ok Ok I know I talk about this every year but. IT'S HERE! FALL! My favorite season. And let me tell you there is nothing like Fall in New England. Josh is a Alabama Boy and will love it till the day he dies, but he even admitted it last night. There is nothing like Fall in New England. It is the prettiest season. I am excited for a few reasons.

1. Pumpkin everything : Lattes, Pies, Bread, Seeds, (I have yet to have a Pumpkin Spice Latte I wait till the temp is just right. After this chilly morning I would say its almost time. And the leaves are starting to change which is another sign.)

2. Out Door Sports - football, soccer, there is nothing like watching sports outside with a warm scarf, drink and blanket in the cool fall air.

3. Decorating. I have to admit, as soon as the temp went in the 40's I brought out my fall decor. I love it.

4. Apple Everything: Picking, Pies, Cider, Cider Doughnuts.

5. The Apparel: Hats, Scarves, Jackets, Boots, I like warm clothing.

Not only did I not have this camera last fall but I have also lost all my pics I took due to my lap top being stolen. SO needless to say I am excited to capture a small glimpse of God's beautiful creation. It is truly the most beautiful season. YEA FOR FALL!!!!!

Lucy in the Sky With Diamonds.....

So I have a few things in my life that I have a special relationship with..... Music, Leaves, The Sky, and Snow. I love these things.
These things stir a special feeling with in me.

Music.
When you hear a good song it makes your heart beat fast and you just want to dance, or sing at the top of your lungs, or worship if it is a song about God. A song can bring back memories of a moment past in an instant.

Leaves.
There is something just spectacular about the leaves changing. Everyday lately I seem to be in awe of the many trees around me. One thing I love about New England is that trees line every road and hang out in to the middle of them. Even the Highways. The leaves are just brilliant with colour.

Snow.
Me and Snow go way back. Its just magical. Everything changes when it snows. The world looks completely different. A magical layer of white fluffy snow. I can sense when it will snow, and I just love it.

The Sky.
Another thing that just causes me to cry out in worship! Its like God just paints the sky in a new way everyday! I love the morning sky when the sun is just popping out between the trees. A fresh start. I love the afternoon sky when the sky is blue and bright and clouds looks like cotton balls in the sky. I love the evening sky when the sun casts rays of light and spectacular color like rays of a rainbow as far as the eye can see. I love the night sky when stars and constellations can be seen. God's mighty power displayed in how big the universe is. I feel so small and so in awe that God so big loves ME.

Well today was a magical sky day. I wanted to capture every moment of it. I got a couple good shots.
I had a moment sitting on a hill watching the sun set over the lake and pondered God. I am thankful for Him. My life would be pretty miserable with out him.

Yummy Thursday

Fall Fall Everywhere!The Leaves are just beautiful here and it is just beginning! Driving to work is filled with me in awe of God's awesome creation. I mean if you think about it He could of just made the leaves turn from green to brown and die. But He didn't! I love the colours they are so bright and striking!Here are some leaves on my back deck.


So one of my favorite parts of fall is Pumpkin. Pumpkin everything! I love the colour of them, I love the taste of them! I even love the seeds roasted YUM!
Here is a yummy Thursday recipe!

Chocolate Chip Pumpkin Bread

3 cups sugar
3.5 cups flour
4 eggs
1 cup vegetable oil
2 cups pumpkin (1 small can)
2 tsp. cinnamon
1 tsp. nutmeg
1 tsp. salt
1 tsp. baking soda
1.5 cups chocolate chips

Mix all dry and add wet ingredients, Grease and flour a bundt pan and bake at 375 for 1 hour. Top should be "crunchy" and toothpick should come out clean. Inside may take longer than an hour to cook.

Fall for Real....

In case you haven't noticed my new blog layout...yes Fall is here. I am glad to be in the North for it too! I missed my Northern Fall Season. Goodness I think I lost some of my thick skin for the cold while living in the South. I woke up this morning it was 40 degrees. I proceeded to get dressed in my long john long sleeve shirt, my vest, and my boots. Yes I know I am a nerd. But my feet are ALWAYS cold. And honestly it feels like what Alabama winter feels like!You should of seen the looks I got when I went to pick up Kennedy from School. I think they could label me as a southerner.(Well I still do have my Alabama plates on my car.) I remember my first Fall in Alabama I kept waiting for the leaves to change and for it to get cool. It was October and it was still warm out. That is when I decided to invest in some more summer like clothes. I now realize after living in Alabama for 2 years my cold weather wardrobe has significantly shrunk! I just need to quit moving from one climate to another. My body and my wardrobe is confused! I do love the seasons up here! But I have to admit around let's say March...I will be desperately missing Alabama weather, and trips to Destin Florida. Thankfully I can still call Alabama home too and go and visit! I miss everyone so much! So here's a shout out to all my Alabama buddies. Enjoy your 83 degree weather today!
**Edit I am not trying to rub it in folks! I am saying how cold it is here and how I miss the warm weather already! (Don't ask me what I am going to do in December)
