Fall/Winter Paleo Style

I'm alive.
Sorry about the lack of posting. My life has been a bit crazy lately. Lots of photoshoots. Hey I'm not complaining! Its been great! But blogging just hasn't been number one on my list. But I wanted to share some awesome recipes I have either invented or come across. Fall and Winter are such a classic time for seasonal favorites, pumpkin, apple, egg nog, how do I enjoy these things and stay paleo you ask? Why like this:


Paleo Pumpkin Bread
Ingredients:

1 cup almond butter
1 egg
1/3 cup honey
3/4 cup pumpkin
1 tsp baking soda
1/2 cup of almond flour
1/2 tsp nutmeg
1/2 tsp cinnamon
1 tablespoon ground flaxseed
dark chocolate chips or dairy free chocolate chips
Directions:

Turn oven on to 350 degrees
Mix all ingredients well in a bowl
Pour batter into an 8×8 greased pan
Bake for 25-30 minutes

Delish!

Beef Stew
Ingredients
2 pounds stew beef
2 stalks Celery chopped
2 broccoli crowns chopped
Brussel Sprouts chopped
2 tablespoons vegetable oil
2 cups water
1 tablespoon Worcestershire sauce
1 clove garlic, peeled
1 or 2 bay leaves
1 medium onion, sliced
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon paprika
Dash ground allspice or ground cloves
3 large carrots, sliced
1 Box of Trader Joe's Beef Broth

Directions
Brown meat in hot oil. Add water, Beef Broth Worcestershire sauce, garlic, bay leaves, onion, salt, sugar, pepper, paprika, and allspice. Cover and simmer 1 1/2 hours. Remove bay leaves and garlic clove. Add carrots and celery. Cover and cook 30 to 40 minutes longer.




Paleo Apple Crisp
2 cups blanched almond flour
½ teaspoon celtic sea salt
1 teaspoon cinnamon (I used 2 tsp in the crisp, plus I sprinkled the apples with cinnamon before baking)
½ teaspoon nutmeg (I used 1 tsp)
½ cup Coconut oil
¼ honey
1 tablespoon vanilla extract
5 medium apples, peeled, sliced, then chopped in half width-wise
In a large bowl, combine almond flour, salt, cinnamon and nutmeg
In a smaller bowl, combine oil, agave and vanilla. First combine oil and vanilla (works best if coconut oil is heated just enough so it is liquid), then stir in chopped dates.
Stir wet ingredients into dry. Use a fork to mash it all together- you want a crumbly consistency.
Place apples in a 2-3 quart glass baking dish (a pyrex bowl or an 8×8 square) Sprinkle with extra cinnamon if you like!
Sprinkle topping over the apples
Cover and bake at 350° for 50 minutes on low rack
When apples are soft and their juices bubble, remove cover and bake 10 more minutes to brown crisp
Serve warm


Paleo Tacos
Simply fix turkey with Trader Joe's Taco Seasoning
chop up avocado, tomatoes, and salsa as topping and put in a cabbage or lettuce leaf!


Egg Nog!

Ok so this is a favorite of mine and I was totally worried I would miss out on it this year!
This version is delish and no dairy involved! Or HFCS!

4 beaten egg yolks
2 cups coconut milk,
1cup almond milk,
1 teaspoon Honey
1 teaspoon vanilla extract
1 teaspoon rum extract
ground nutmeg and cinnamon to taste and a pinch of cloves
Directions:

Mix egg yolks, 2 cups of coconut/almond milk and honey Stir gently but constantly over medium-low heat until the mixture thickens enough to cling to and coat the back of a spoon, about five to ten minutes. Be patient with this process – if you turn the heat up too high or don’t stir, the egg yolks might turn into scramble eggs.
Remove from heat and set the pot in a larger bowl filled with ice water (careful, so no water overflows into the eggnog!) and stir for 2-3 minutes then add the last cup of milk, vanilla, spices and rum extract.

Chill in the fridge! The add extra nutmeg, and serve! Try this in your coffee too its delightful!

Rainy, paint, chili


So it's been raining here....a lot. I know I know....those of you who live down south would embrace this cool burst of rainy weather. But for me I like my summer to last till labour (yes I am Canadian and I spell it that way) day at least. I know its coming back this weekend, but its been a lot of rain! I think the fact that I have some furniture to paint also is making me bummed. I planned on painting on my day off (today) but alas due to the weather it will be postponed. Josh and I have been working hard to decorate our apartment a bit. Little by little we have added pieces and stuff to make our place feel more cozy and like ours. When we got married all our furniture was given to us. Which was a blessing for sure, but now we are able to add some pieces that are more us. Still for super cheap! (think thrift store/craigslist/big warehouse filled with stuff this guy sells in Gloucester for cheap cheap cheap)
I will post some pictures before and after of what we have done when we are done.

Anyway


My favorite things to do when it rains are :
1. Wear these

2. Read. I am currently reading this and this.

3. Watch a movie or an episode of this

4. Drink Tea I love this

5. Make soup or chili. I did make some chili and made up my own new recipe. It was pretty darn good.

I started with 2 pounds of ground turkey
1 onion chopped
1 zucchini chopped
1 squash chopped
1 green pepper chopped
2 pressed garlic cloves
sauteed all that and added chili powder and cumin to taste
1 can of diced tomatoes (not drained)
3 cans of light red kidney beans (not drained)
4 pices of uncured nitrate free bacon cooked and chopped
I just kept added in the chili powder and the cumin till I got the right amount of flavor.
It was yum!

Right Path


Just finished watching Food Inc. Seriously if you want your world rocked, and you want to understand why Bonfire exists, why it matters where you shop and what food you eat. Watch it. I dare you. Its free! Go get a free trial with Netflix and its one of the play now options and you can watch it right on your laptop. It was just another great reminder we are on the right path. Actually tomorrow night I get to share my "testimony" of sorts at a Bonfire party that is going to be filmed for the website! I am super pumped. I just have seen such radical changed in my health and life, and I honestly am so thankful and willing to share with anyone who will listen!

Also did a crossfit workout today. WOWIE! It's been a while. I kinda took a break and thought I could get away with it. I was reminded how much of an impact moving really has on my body. I was thankful to be able to do it again. You can bet I will be sore tomorrow:
5x5 Press
5 rounds of
30 Box jumps
40 Double Unders
20 kettle bell swings.
I was sweating and it took me 18 minutes. Not great. But ready to get back to where I was!

Here is an awesome smoothie recipe for these hot days we are being thrown. Tastes as good as a milkshake....actually better, and everything in it is good for you.

1 Banana
1/2 cup frozen strawberries
1/2 cup Almond milk
1/2 cup of Coconut dream bare coconut frozen dessert (dairy free)
You can add protein powder if you want a kick.
But blend and its delicious and creamy treat for hot summer days!
